Sundays Beach Club proudly welcomes its new Culinary Director, James Viles. With a career that has spanned many years, James has worked with some of the most prestigious hotels and resorts in Australia, such as Aman Resorts, Orient Express Hotels, and the Venice Simplon Orient Express. 

James boasts extensive experience in launching and rebranding culinary havens throughout the Middle East and Europe, collaborating with renowned establishments like the Jumeirah and GHM Hotels. His impressive journey has also seen him working alongside culinary icons, including Michelin Chef Hans Haas of Tantris, Alain Ducasse, René Redzepi, and Michel Roux. Not only that, James also earnt the Sydney Morning Herald Chef Hat at the remarkable age of 23, solidifying his status as one of the youngest chefs to achieve this prestigious honour.

As one of Australia’s most respected chefs and restaurateurs, James is known for his unwavering commitment to sustainability and his innovative approach to modern cuisine. He places a strong emphasis on sourcing only the finest produce, collaborating closely with farmers, and drawing inspiration from the beauty of each season, people, and nature’s gifts.

Using his 26 years of experience, James Viles’ consulting firm adapts to the ever-evolving culinary landscape, emphasising authenticity and a natural perspective on food and beverages. The brand takes pride in sharing genuine stories about regions, farmers and farming techniques, maintaining authenticity without unnecessary interventions or gimmicks.

James’ acclaimed restaurant, Biota Dining, has emerged as a culinary powerhouse in Australia’s dining scene, earning Two Chef Hats in the Sydney Morning Herald Good Food Guide for an impressive nine consecutive years.

Additionally, James has demonstrated forward-thinking leadership in the hospitality sector, resulting in two books published by Murdoch books, ‘BIOTA, Grow Gather Cook’ and ‘DUE NORTH, A Journal Of Australian Food And People.’

James is set to elevate Sundays Beach Club with a menu crafted from honest ingredients, providing a tantalising experience for guests seeking an immersive culinary experience. This aligns with his vision of building future-ready models that are in tune with emerging market trends.

Officially launched on November 15, 2023, James’ carefully curated menu at Sundays is available throughout the day, perfect to pair with Sundays’ tempting beverage menu, alongside an exclusive 5-course menu for Sunday’s Christmas Lunch – where flavor takes center stage!
